#29 -- Fajita Salad

1 sliced onion
2 bell peppers sliced
grilled chicken
1/2 bag a corn
sprinkles of Cumin
tomato
cheese
lettuce

Fry in cast Iron Frying pan the onion, peppers, chicken and corn and cumin. heat through. at end turn to high heat and stir. This gives the 'burnt' color/flavor to the veggies.

make a salad with this stuff.

YUM

SERVE WITH FRUIT and YOGURT DIP.

YUM.

Difficulty in making(5 is easy): 5. hardest thing is chopping veggies, but i have a veggie chopper for that
Healthiness(5 is really good): 5. It is chicken and veggies, there is nothing bad for you in that!
Being able to make this on the Fly(5 is I always have the ingredients): 4. I always have frozen peppers, corn, onions and chicken avialable. tomato and lettuce is the only thing.
Tastiness(5 is really good): 5 . This was quite yuummy. WAY YUMMY. and a salad. good stuff
Leftoverness(5 is a lot and tasty day 2): 4 . This would be good on day 2. But we had nothing left over. Not sure if that is good or not.

#29 -- Chocolate Chip Caramel Brownies (2/52)

From Mom's recipe Box cut out of something from the Sunday Paper.

2 Cups(12 oz pkg) NESTLY TOLL HOUSE Semi Sweet Chocolate Morsels, divided
1 Cup Granuated Sugar
1/2 Cup Undiluted CARNATION Evaporated Skimmed Milk
1/4 Cup Unsweetened Applesauce
2 TBSP Margerine
4 oz(1/2 cup) Liquid Egg Substitute
1 1/4 Cups Flour
1/4 Tsp baking soda
1/4 Salt
2 Teaspoons VANILLA
12 Caramels
1 tablesppon CARNATION Evaporated Skimmed Milk

Heat 1 Cup morsels, sugar, Evaporated Milk, applesauce and margerine in large, heavy saucepan over low heat, stirring until morsels are melted. Remove from heat. Stir in egg substitute. Stir in flour, soda, salt, vanilla and remaining morsels. Spread into 13x9 baking pan sprayed with nonstick cooking spray.
BAKE in preheated 350° oven for 16-20 or until set. Melt caramels with 1 tablesppon evap. milk in small microvwave-safe bowl on high(100%) power1 to 3 minutes, stirring every 15 seconds until smooth. Drizzle over warm brownies. Serve Warm or Cold.

Makes 24 brownies. 160 Calories. 6 grams Fat per serving.

Difficulty in making(5 is easy): 2. Melting chips. stiring not letting stuff burn the non melted chips fell to the bottom. it wasn't so fabulous.
Healthiness(5 is really good): 3. only 160 Calories but it's a small bar.
Being able to make this on the Fly(5 is I always have the ingredients): 2 yeah I don't keep evap. milk or caramels around here.
Tastiness(5 is really good): 2. Eh. It was just. Eh.
Leftoverness(5 is a lot and tasty day 2): 4 . Yeah, it's a whole pan. That's too much for 2 people.

I'll find a new dessert. This didn't rate high enough.

#82 - Mancini's (1/50)

The Experience.

Who: Andie, Kat, Jaime, Jill, Amy, Becca
What: Dinner at a New Restaurant
When: Saturday Feb 7, 2009. Before the Swarm Game.
Where: Mancini's Char House. St. Paul (West 7th)
Why: Because we were going to the Swarm Game.

What I ate: Steak Kabobs with Baked Potato, Salad, Garlic Bread, Relishes. WATER to drink.

Location: 4. It was easy to get in the parking lot. It was in St. Paul. It wasn't in a sketch neighborhood. Parking = free. Only thing better is if where across the street from my townhome. Or someone's place anyway.
Service: 5 We were seated immediately(we also arrived at 4:45). The waitress was very attentive and filled our water frequently.
Menu Choices: 3 It is a steak house, you don't expect much on the menu. But there were only 8 things.
Price: 2 I ate steak. Took some home. It's a steak house. I paid 23.50. Not too bad for the amount of meat I got. Price doesn't compare to the Farmington Steakhouse though.
Atmosphere: 3 There is a picture of Joe Mauer. We did eat near a State Senator. Otherwise, nothing special.
TOTAL: 17

Would I eat there again? Sure. But not anytime soon, I want to go other places first, it wasn't super spectacular.

#29 -- Chicken Crunch Cassarole (1/52)

RECIPE:
3 Cups cooked Chicken/Turkey Cubed
1/4 cup chopped onion
1 cup sliced celery
2Tbsp Margerine
2 Cans Cream of Mushroom Soup
1 Cup Milk
8 oz can Mushroomes, drained
2-3 Cups chow mein noodles
1/2cup chopped almonds(optional)

Saute onions & Celeery in Margerine until Tender crisp. Mix everything together. Place in greased casserole. Bake 45 MIN@350° covered. Uncovered 15 minutes.

Difficulty in making(5 is easy): 4. Pretty darn easy. You do have to chop up some onion and celery. Really good recipe if you have chicken just hangning out. Otherwise it is dump and stir.
Healthiness(5 is really good): 3. Well Chicken/Turkey is good. If you use the Healthy Heart Cream of Mushroom Soup that's good. The only bad thing is the CHOW MEIN NOODLES. But there are a lot in this recipe so that is why it gets a 3.
Being able to make this on the Fly(5 is I always have the ingredients): 2 Who has chow mein noodles around??? They are really key to this recipe.
Tastiness(5 is really good): 4 . This was quite yummy. Not as fabulous as tator Tot Hotdish or Stroganoff
Leftoverness(5 is a lot and tasty day 2): 4 . This is a completely different food on day 2. It is super nummy. There is usually a lot left over if you make the above recipe for 2.
